Ingredients

  • 150 grams of dry noodle soup

  • 150 grams of shiitake mushrooms

  • 500 grams beef

  • 150 grams carrots

  • 300 grams bok choy

  • 70 grams onion

  • 3 stalks scallions

  • 3 cloves of garlic

  • 2 purple onions

  • Seasoning: Oyster oil, soy sauce, seasoning seeds, sesame oil, ground pepper,…

Directions

  • Step 1: Prepare ingredients
    Garlic, shallots, peeled and minced.
    Beef rub with salt, wash several times, drain and cut into bite-sized pieces. Then put the meat in a marinated bowl with a little garlic, minced shallot, 1.5 tablespoons oyster sauce, 1 tablespoon soy sauce, 1 teaspoon seasoning, ½ teaspoon sesame oil, 1 tablespoon cooking oil, a little bit of ground pepper, mix well and leave for about 20 minutes for the meat to infuse the flavors.
    Scallions cleaned, cut diagonally. Onions peeled, cut areca. Clean mushrooms, cut in half. Peel the carrots and cut them into thin slices. Clean bok choy, cut in half.

  • Step 2: Prepare stir-fry sauce
    In the bowl of seasonings, including 2 tablespoons soy sauce (or 1 tablespoon black soy sauce), 2 tablespoons oyster sauce, 1 teaspoon sugar, 1 tablespoon cooking oil, and a little ground pepper, mix well.
  • Step 3: Stir-fry beef and vegetables
    Put the pan on the stove, heat the cooking oil, and saute a little garlic and minced shallot. Put the marinated beef in, stir-fry until rare, and remove to a plate.
    Continue to use the same pan again, heat a little cooking oil, and saute garlic and minced shallots. In turn, add mushrooms and carrots with 2 tablespoons of stir-fry sauce, and mix well. When you see that the 2 ingredients are cooked, you continue to add the bok choy and stir-fry, pour them all into the bowl, and set them aside.

  • Step 4: Prepare “Banh pho”
    Put the rice noodle in a bowl of hot water at 70 degrees Celsius, soak for about 5 minutes, then take it out, remove the water and soak it in hot water of 70 degrees Celsius again. At this point, the noodles are soft, you use chopsticks to stir them, then drain, rinse with cold water and dry.

  • Step 5: Finished product
    Put the pho noodles in a bowl, and mix well with the rest of the stir-fry sauce.
    Put the pan on the stove, heat a little oil, and then add the minced shallots and sauté until fragrant. After that, you continue to put the pho mixed with the sauce into the pan, stirring well with high heat.
    When you see that the noodles are soft, add the vegetables and beef made in step 3, and mix well. Stir-fry for another 3 minutes, then turn off the heat and get the finished product.

Notes

  • Using a large version of Pho will look more beautiful.
  • You can also use dry pho to make stir-fried pho with beef. Soak dry pho for about 15 minutes to expand, the noodles will be easily broken. Then put in a basket to drain. Follow the same steps as above.
  • It is recommended to marinate the pho noodles before stir-frying so that the noodles are evenly absorbed and rich in flavor.
  • Mixing eggs with rice noodles before stir-frying makes pho more fragrant, has a beautiful color, and is very easy to stir-fry.
