Siamese duck vermicelli (Bún ngan) – is a strange dish of Vietnamese cuisine if you are bored with vermicelli from meats such as pork, beef, or chicken,… then let’s try it. Ingredients

  • Vermicelli 500 gr

  • Siamese duck 1/4

  • Sour bamboo shoots 300 gr

  • Ginger 1 branch

  • Green onion 1 branch
    (cut into pieces)

  • Purple onion 1 piece

  • White wine 8 tbsp

  • Cooking oil 1 tablespoon

  • Fish sauce 1/2 tbsp

  • Common seasoning 1 little
    (Salt / MSG / seasoning)

Directions

  • Step 1: Process materials
    Ngan bought you put in a bowl along with 4 tablespoons of wine and 1 tablespoon of salt. Then, rub this mixture on the body of the siamese duck, then rinse with water several times and dry.
    Sour bamboo shoots are washed with water and left to dry.
  • Step 2: Boiled siamese duck and bamboo shoots
    Put the pot on the stove, turn up the heat, put the geese in the pot. Then, pour water to cover the swan meat. Put 1/2 tablespoon of salt, 4 tablespoons of white wine in a pot and bring to a boil.
    When the water starts to boil and foam, you take out the swans, put them in a bowl of cold water, rinse and drain.
    Put the sour bamboo shoots in a small pot with 500ml of water, 1/2 tablespoon of salt, then put on the stove and bring to a boil.
    You boil the bamboo shoots for 3-5 minutes since the water boils, then take them out, wash them with water several times and then drain.

  • Step 3: Stir-fried sour bamboo shoots
    Put the pan on the stove, add 1 tablespoon of cooking oil to the pan. When the oil is hot, add the sour bamboo shoots and stir-fry them with 1/2 teaspoon of salt, 1/3 teaspoon of MSG until the bamboo shoots become firm.
  • Step 4: Put bamboo shoots and cook with siamese duck
    Put another pot on the stove, put the geese in, pour the water to cover the swan meat, and season with a seasoning mixture of 1/2 teaspoon salt, 1/2 teaspoon seasoning, 1 smashed purple onion, 1 ginger stalk smashed and boiled for 30 minutes on medium heat. Then, take out the geese to cool.
    You add the sour bamboo shoots and cook with the water above for about 10 minutes. Add 1/2 tbsp fish sauce, 1/2 tbsp monosodium glutamate, stir well, and season to taste.

  • Step 5: Chop siamese duck
    After cooled, you cut into bite-sized pieces.
    Put the vermicelli in a bowl and arrange the geese on top. Then you add green onions. Finally, pour the broth into a bowl with a little more sour bamboo shoots and you are ready to enjoy.
  • Step 6: Finished product
