  • Grilled chopped fish 200 gr

  • Fish sauce 300 gr

  • Roast pork 200 gr

  • Red snapper 1 fish

  • Fish sauce 1/2 teaspoon

  • Cooking oil 7 tablespoons

Directions

  • Step 1: Process materials
    Lemongrass removes the dead leaves and roots, wash, take 1 clove of lemongrass and mince it. Red onion peeled, washed, cut one tuber in half, the other one is finely chopped.
    Green onions are cut off the yellow leaves and roots, wash, cut the onion head to separate, and the onion leaves are cut into small pieces. Chili peppers are washed, cut in half lengthwise with a knife, and carefully remove the seeds. As for the chili, wash it and chop it finely.
    Pineapple you peel off the skin and fragrant eyes, wash and cut into pieces. Wash eggplant and cut into bite-sized pieces.
    Red snapper you wash, remove the shell of the fish inside, the scales with the fins. Then you cut the fish into 3 pieces, the first part, the tail part you save to make another dish, with vermicelli, you only use the middle part!
    Continue to use a knife to separate the fish bones and then rinse thoroughly with water. Cut the fish into bite-sized pieces.
    As for the ink, you peel off the skin and then wash it thoroughly with water.

  • Step 2: Cooking fish sauce
    Put the pot on the stove, and add about 500ml of water. Then, put 300gr of choke fish sauce into the water, use a spoon to crush the fish carcass, and cook until the fish is rotting.

  • Step 3: Making chili sauce
    Put scallions into the bowl of fish cakes, and mix well to blend the onions into the fish cakes. Next, you put all the fish cakes in a glass bag, season with 1 teaspoon seasoning, 1/3 teaspoon MSG, 1/2 teaspoon sugar, 1/2 teaspoon pepper, and 1 teaspoon cooking oil coffee.
    Then, use your hands to knead the fish cakes thoroughly to absorb the spices. Finally, add 1/2 teaspoon of fish sauce and mix again.
    Use a spoon to scoop each fish ball stuffed into each prepared chili. Similarly, you complete the prepared fish and chili sauce.
    After stuffing is done, put the pan on the stove, put in about 3 tablespoons of cooking oil, wait for the oil to heat up, then put the chili sauce in and fry until golden on both sides and then remove to a plate. drain the oil.

  • Step 4: Boiled shrimp, squid, fish
    Put a pot of water on the stove, add 1/2 teaspoon of salt, and 1/3 teaspoon of MSG and bring to a boil. When the water boils, put the squid in and boil for about 2 minutes.
    When the squid is cooked, you add the shrimp to boil for about 5 more minutes. After 5 minutes, shrimp and squid are cooked, then taken out of the water to drain.
    Finally, put the red snapper in and boil for about 4 minutes, then carefully remove the fish.
  • Step 5: Cooking broth
    Put the pot on the stove, and put about 2 liters of water in the pot. After 30 minutes of cooking fish sauce, the fish has softened, pour the fish sauce through a sieve to remove the fish carcass, and the filtered fish sauce, then put in the broth, add all the fragrant cut pieces, cook for about 1 hour.
