Vermicelli sprouting (Bún mọc) is a favorite dish of many Vietnamese for a lot of reasons. Let’s go to the kitchen with our Bun moc recipe.

Ingredients

  • Young ribs 400 gr
    (or tenderloin ribs)

  • Raw spring rolls 250 gr

  • Tube bone 300 gr

  • Fresh vermicelli 1 kg

  • Spring rolls 200 gr

  • Wood ear 60 gr

  • Green onion 5 branches

  • Coriander 1 bunch

  • Purple onion 3 pieces

  • Raw vegetables 300 gr
    (perilla / basil / lettuce…)

  • Common seasoning 50 gr
    (fish sauce/ seasoning/ salt…)

Directions

  • Step 1: Process materials
    Bones are washed, cut into small pieces, then boiled with boiling water. Next, you prepare a new pot of water and put the bones into the stew, add a little salt, seasoning, and fish sauce to make the broth sweeter. Note that you have to regularly skim the foam to keep the water clear.
    Young rib (or tenderloin) is bought, washed, cut into small pieces, and eaten. You can wash the ribs with salt water to remove the smell. Then, you put the ribs in a bowl, add 1/3 tablespoon of fish sauce, 1 tablespoon of seasoning, and a little ground pepper, mix well, and marinate for about 10 minutes.
    Wood ear mushrooms are washed, soaked in hot water for the mushrooms to expand, and then chopped into small pieces.
    Spring rolled sliced ​​into bite-sized pieces. Scallions and coriander root were removed, washed, and finely chopped. Red onion peeled and chopped.
    Wash raw vegetables thoroughly with water. Fresh vermicelli is lightly boiled with boiling water and drained.

  • Step 2: Make sprouts
    Put raw spring rolls in a bowl, add wood ear, scallions, and a little seasoning, and mix well.
    Then, you pellet this mixture into small, edible balls.
    You drop these sprouts into the pot of broth, when they are ripe and floating on the water, take them out.
  • Step 3: Cooking broth
    Put the pan on the stove, and add the cooking oil, when the oil is hot, add the red onion and fry until fragrant, then add the ribs and stir well. When the meat is cooked again, turn off the stove.
    When the broth boils, you add the ribs, cook until the broth boils again, then add the sprouts, and add seasoning to taste. Continue to cook for about 10 more minutes.

    Put the vermicelli in a bowl, add ribs, and spring rolls together with some green onions and coriander, then pour the broth and enjoy.
