Duck noodles soup – Miến ngan is one of the dishes that are no longer strange to diners when they have the opportunity to visit Vietnam. Siamese duck noodles soup impressed me with its unique ingredients and delicious taste. Today let Tasty Touch discover the simple recipe for this delicious dish.

Ingredients

  • Siamese duck 1/2

  • Dried bamboo shoots 400 gr

  • Noodles (Miến) 300 gr

  • 1/2 cup ginger

  • Cooking oil 2 tablespoons

  • Purple onion 6 pieces

  • Green onion 1 branch

  • Wine 1 tbsp

  • Chinese coriander 1 little
    (coriander)

  • Common seasoning 1 little
    (salt/pepper/seasoning/monosodium glutamate)

Directions

  • Step 1: Preliminary processing siamese duck
    The siamese duck is bought to clean its feathers and blanch it in boiling water with 1 teaspoon of salt, and 1 tablespoon of wine for about 2-3 minutes to remove the fishy smell of the siamese duck, then wash it again.

  • Step 2: Prepare other ingredients
    4 purple onions and ginger are lightly grilled until scorched, then smashed. Green onions and coriander are washed and finely chopped.
    Buy dried bamboo shoots and soak them in water or rice water for about 2-3 hours for soft bamboo shoots.
    After soaking, put a pot of water on the stove to boil, add 1 teaspoon of salt and boil the bamboo shoots for about 2 minutes, when the bamboo shoots are soft, take them out into the basket, and rinse with cold water and squeeze dry.
  • Step 3: Boil siamese duck
    Put the pot of water on the stove and put the siamese duck in with shallots, freshly roasted ginger, 1/3 teaspoon salt, 1 teaspoon seasoning seeds, and boil for about 5 minutes until the water boils, then remove the foam, cover the pot and boil the siamese duck 30 minutes.
  • Step 4: Stir-fried bamboo shoots
    Put the pan on the stove with 2 teaspoons of cooking oil, when the oil is hot, add the remaining 2 smashed purple onions and fry until fragrant.
    Stir in bamboo shoots with 1/3 teaspoon salt, 1.5 tablespoons water, 1/3 teaspoon MSG, and stir-fry for about 3 minutes.

  • Step 5: Cooking broth
    When the siamese duck has been boiled for 30 minutes, take out the siamese duck meat, put the bamboo shoots in the broth and cook for about 10-15 minutes, continue to skim off the foam during the cooking process to make the broth more delicious.
  • Step 6: Boil noodles
    North on the stove 1 pot of water, when the water is boiling, put the noodles in for about 2-3 minutes until the noodles are cooked evenly, soft, turn white, then you can take it out and boil it with cold water.
  • Step 7: Finish
