Crispy Vietnamese fried noodles – Mì xào giòn are an easy and attractive dish with fresh vegetables mixed with sweet seafood and meat.   • Crispy fried noodles 2 packs

  • Fresh shrimp 200 gr

  • Fresh squid 200 gr

  • Pork skin ball 1/2 piece

  • Fresh shiitake mushrooms 100 gr

  • Straw mushroom 100 gr

  • Choy sum 100 gr

  • 1 carrot

  • Cassava root 1/2 of

  • Onion 1 piece

  • Green onion/celery 1 pinch

  • Garlic 4 cloves

  • Purple onion 2 pieces

  • White wine 4 tablespoons

  • Tapioca starch 1 tbsp

  • Oyster oil 1 tbsp

  • Cooking oil 500 ml

  • Common seasoning 1 little
    (salt / sugar / seasoning / monosodium glutamate / ground pepper)

Directions

  • Step 1: Preliminary processing of vegetables
    Peel the carrots and cassava roots, wash them, and cut them both into thin pieces. Kale washed, cut into pieces about 2 fingers long, drained.
    Green onions and celery cut off the roots, remove the dead leaves, then wash and cut into pieces. Onions are peeled, washed with water, and cut areca.
    Mushrooms and mushrooms are washed with clean water and then soaked in dilute salt water for about 10 minutes, then washed again, large mushrooms are cut in half or 3 pieces to taste, while small mushrooms are left whole. Garlic and shallots are peeled and chopped.

  • Step 2: Prepare other ingredients
    To reduce the odor, after washing it once with water, soak the pork skin ball in white wine for about 30 minutes, then rinse it with clean water several times and cut it into bite-sized pieces on a cutting board.

    In the same frying pan, add 30ml of cooking oil and the remaining 1/2 place of minced onion and garlic, saute onion and garlic, and stir-fry shrimp and squid.
    Season with 1 teaspoon of seasoning, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/3 teaspoon of monosodium glutamate, then season to taste, stir-fry for about 3 minutes, then the shrimp and squid are cooked. paint together with shading.
  • Step 4: Make mixed crispy fried noodles
    Heat 450ml of cooking oil and then fry the noodles on high heat, fry on both sides until golden crispy, then remove to a plate to drain the oil.
    In a frying pan, you pour out the cooking oil, leave about 2 tablespoons, heat the oil, and add the remaining minced onion and garlic to fry until fragrant.
    Next, add all the vegetables including carrots, onions, cassava roots, shiitake mushrooms, and green onions, and stir-fry quickly over high heat.
    When the vegetables are just cooked, add the pork skin balls, shrimp, and squid, and stir-fry together, add 1 tablespoon of oyster sauce and stir well.
    Stir-fry until the water boils, dissolve 1 tablespoon of tapioca flour with 30ml of water and then pour it into the saute pan, when the water boils, season to taste, add the green onions and celery to the island, turn off the heat, sprinkle 1 more teaspoon ground pepper.
    Scoop the fried vegetables with shrimp and squid balls on the plate of crispy fried noodles and you’re done.
